As a Mom, wife and business owner, I have to come up with the occassional recipe that is quick, easy & delicious. One of my favorite recipes is my Chicken Tortilla Soup. As a couple who is newly living together or will be soon, you will find that the never-ending question in the house will be, “what’s for dinner”. My husband and I have very different styles of eating – I eat my big meal at lunch and he eats his…well, breakfast, lunch and dinner. If I ate like him, I’d be as big as him;) It’s a learning process, but we enjoy cooking and eating together. To help you along with your learning process, I will try to provide you with the occassional recipe in the hopes that you may have an answer to that neverending question.
Chicken Tortilla Soup my easy way:
Bring the following ingredients to a boil, then simmer:
Bag of frozen chicken strips
Can of black beans
Can of corn
Can of salsa fresca (found in the ethnic food aisle: chopped tomatoes, onions, cilantro & lime juice)
Can of diced chilies
Your favorite salsa to taste
Large box/can of chicken broth
All seasoning is to taste:
Hot paprika
Cumin
Turmeric
Cayenne (Red) Pepper
A few drops of chili oil
Heat the above ingredients to taste.
Additional ingredients to add to bowls:
Fresh cilantro
crushed tortilla chips
chopped avocado
Pepperjack cheese
Sour cream
In bowls, add crushed tortilla chips, shredded pepperjack cheese, chopped fresh cilantro & chopped avocados. Ladle the soup into the bowls and dollop with sour cream. *optional: squeeze a little lime* & serve with cornbread.
