My ex-Mother-in-law made these yummy enchiladas and while they’re probably not true Mexican food, they are still delicious and I would still couple it with a Pacifico or Negro Modelo.  This is a great recipe for leftovers or when feeding a decent group of people.  Need to bring an entree to a party, this is easy and travels well.  Enjoy:

Light Sour Cream Chicken Enchiladas
12 whole flour tortilla
2 cups frozen cooked chicken breast; chopped
8 oz nonfat plain yogurt (optional)
3/4     cup light sour cream
1/4 cup green onion; sliced

taco seasoning or cumin & cayenne pepper to taste

10 oz cream of chicken soup; condensed
4 1/2   oz green chile; chopped, drained
3 cup pepper jack cheese;   shredded
19 oz green enchilada sauce

1 can salsa fresca (onions, tomatoes & cilantro) found in Mexican food aisle

cholula hot sauce to taste

1      Heat oven to 350 °F . Combine sour cream, yogurt, soup, chicken, salsa fresca, taco seasoning, 1/2 can of green enchilada sauce, green onions and chilies, mix well. Spoon about 3 tablespoons sour cream mixture down center of each tortilla and bit of cheese.  Reserve 1/4 cup of cheese.  Roll tortilla and place in 13×9 in. pyrex baking dish.
2 Spoon remaining sour cream mixture and green enchilada sauce over tortillas. Sprinkle with remaining cheese. 
3 Bake uncovered at 350°F for 30 to 35 minutes or until hot and bubbly.
4 If desire, garnish with shredded lettuce and chopped tomatoes.  Top with Cholula hot sauce if desired.
