Awhile back my husband and I were invited to one of those fun Dream Dinners places where a group of friends can gather together and assemble a week’s worth of dinners ahead of time.  When you reserve as a group, it’s a bit of a party, and Dream Dinners set out some nibbles for us to nosh on while we assembled.  It was fall when we went, and Dream Dinners made this wonderfully delicious and EASY Ginger Pumpkin Dip.  We like to make it and serve it in a hollowed out pumpkin or a pretty bowl.  We’ll actually be making it this Friday for our daycare’s monthly potluck.  Serve it with Ginger Snaps and sliced apples – super duper yummy!

Spiced Ginger Pumpkin Dip

1 – 8 ounce package cream cheese, softened (it’s easiest to use the whipped cream cheese which is soft and easy to blend)
2 cups confectioner’s sugar (aka: powdered sugar)
1 – 15 ounce can pumpkin puree (I like to use a can of pumpkin pie puree)
1 tablespoon pumpkin pie spice (or 1/2 teaspoon each of cinnamon, allspice, nutmeg, clove) 
1 teaspoon pure orange extract (or 1 tablespoon frozen orange juice concentrate)
1/2 teaspoon ground ginger
Gingersnaps cookies, apple slices

Blend cream cheese and confectioner’s sugar until smooth in food
processor (or if you don’t have a food processor, just beat really well with a spoon). Remove cover; add pumpkin and remaining ingredients. Blend
thoroughly.

Chill 30 minutes or until ready to serve. Serve with cookies and/or
apple slices.

Yield: 20 servings
