Here in San Diego, we are lucky to have many options for farmer’s markets all within close proximity of each other and all working together to provide us some of the best local fare available. Today, we’re featuring a recipe that can easily be used with your own local farmer’s market favorites – enjoy!
Marinate four pork chops from in olive oil, lemon juice, rosemary and thyme. Brown for two minutes on each side over medium heat and transfer to a baking dish. Slice a medium onion and 2 small apples and sautee in a splash of left over olive oil marinade until browned. Spread onions and apples over chops in baking pan, then deglaze sautee pan with one cup of apple juice. Let apple juice reduce by half then pour over pork chops and bake for 20 – 25 minutes until cooked through.
