Anything with this much cheese on top needs to go into my recipe repertoire. The title of this post says it’s for Easter brunch, but let’s face it, it will work for any brunch, or dinner, or lunch, or snack…you get the picture. Cheese is a win no matter how you slice it (yikes…how’s that for a pun?). Just enjoyed a chipotle/chorizo mac and cheese a chef friend of mine made for my 42nd b-day that almost clogged my ventricle, but induced pure flavor ecstasy. So trade off of shaving a few years off of my life was worth it. Pink hair was a bold choice btw!

I totally agree – not sure what I would do if someone told me I could no longer eat cheese. It’s sort of a staple of my diet. Thanks re: pink hair – it was a wig for a New Year’s Eve party and was a lot of fun;)
