Today is a beautiful sunny day in San Diego. It’s the perfect beginning to the 3 day weekend, and I am hoping and praying the weather stays this nice. Sunny days make me think of parties, parties make me think of cocktails. There, I said it.
For your own 3 day weekend party or summer party, why not serve your guests these delicious cocktail popsicles from Endless Simmer. I cannot think of anything better than a cocktail disguised as a popsicle! Just think of the possibilities. Although, if you’re like me and have children, it would be best if you also provided some non-cocktail popsicles for the kids or you might have mayhem on your hands. Aren’t they sooooo pretty?

I hear ya, Sunny San Diego seems to be a bit of a tease this year – pokes it’s head out and then rains the very next day. Perhaps making these popsicles will help to usher in the nicer weather.
