Pesto is hands down one of the easiest things to make.  Assuming you have a food processor or blender.  An immersion blender MAY work, but since I’ve never tried it, I can’t say for sure – you let me know;)  Classic pesto consists of a few simple ingredients: basil, olive oil, parmesan or pecorino cheese, garlic, marjoram, parsley, pine nuts & salt and pepper.  Olive oil is used in abundance so you’ll want to make sure to use a good olive oil.   

Pesto is great over pasta or even used to make our Caprese Bruschetta.

Here’s what you’ll need:

  • fresh basil
  • olive oil
  • shredded or grated parmesan or pecorino cheese
  • marjoram
  • parsley
  • pine nuts
  • garlic
  • salt
  • food processor or blender

Here’s what you’ll need to do:

  • add the basil to the food processor and a bit of olive oil – blend.  If it needs more olive oil, then add it. 
  • now, add the parmesan cheese & pine nuts – blend.  If it needs more olive oil, then add it.
  • taste
  • add garlic, parsley, marjoram and salt – blend.  If it needs more olive oil or basil, then add it.
  • blend.

Are you getting the drift here?  You just add a bit of this, then blend, add a bit of that, then blend.  taste & repeat until you get the flavor and consistency that you’re after.  Whallah!  Fresh home-made pesto.  Store the pesto in a sealed container in the refrigerator.  This is also a fun little gift to give to people for holidays or hostess gifts.  Seal in a cute flip top type of mason jar with a home-made label and you’re all set.  If you’d like to make a lot at once, you can put the pesto into ice cube trays and freeze, then remove, put in ziploc freezer bags and put back in the freezer.  They can be easily thawed by putting the cubes into a microwave safe dish and slowly thawed in the microwave.
