I don’t have a lot to say about my weekly menus. I mean, what’s so interesting? I think about what I want to eat/make and I put it on this pretty picture to share with you. You don’t really care about what I might have to say right? You want ideas, that’s why you clicked here. You’re bored and stressed out with the same ol’ same ol’ you’re feeding you and yours and you just want quick and easy ideas. Well, enough then of my jibber jabber – here is this week’s menu:

Mediterranean couscous salad (actually I found this on the back of a chicken broth box, so you can substitute chicken broth for the vege broth in this recipe) – Healthy & delish. Tilapia Fish Tacos: We buy our tilapia pre-breaded, then pan-fry them (yes, I know, frying not the most healthy – you can bake them as well).
For a good white sauce, mix equal parts sour cream with mayonnaise, add in a good amount of lime juice, sprinkle with coriander and a bit of cumin. Mix it all up with a spoon, then dollop onto your fish taco along with salsa fresca.
To make salsa fresca: dice up a yellow onion, chop up a bunch of cilantro and dice a tomato. Add to a bowl, squirt lime juice, sprinkle with cumin and mix.
