
Tonight’s dinner brings a wee touch of Ireland…Irish Stew, bread with Kerrygold butter and a Guinness Extra Stout. Half of that Guinness went into the stew. Now I can eat my alcohol and drink it:) ? Cheers!
For reals though, this stew is cozy comfort food – made in the crock pot (or an instant pot if you have one).
I used cubed stew beef, baby carrots, potatoes, onions, thyme, celery, beef stock, garlic, tomato paste, Guinness beer (obviously)…honestly, I don’t remember everything I used – LOL. I sort of just throw stuff together sometimes. I will give you a link to SimplyRecipes below that has a recipe that looks similar to what I did. I will say that it’s really important you brown the cubed beef before you let whole thing cook in the crock pot or instant pot (you can brown the beef right in your pot before you start to put it all together), it just really helps to break down and make the meat fall apart and not so chewy. I also topped mine with parmesan cheese and I didn’t use parsnips.
