Because 2020 can still have some happy moments. Social distancing happy hour at the neighbor’s yard. Hand sanitizer for everyone to use before pouring their own drink. Sitting way more than 6 feet apart, we are in our neighbor’s yard on the lawn, they on their deck by their house and the other neighbors in their own driveway on the other side of the fence. We bring our own chairs and the rum helps us to talk real loud – haha. Pineapple rum daquiri just in time for Spring. Yum

Pineapple Rum Daquiri

The idea is to use our leftover alcohol from the Halloween parties. For this recipe, I used a mix of Bacardi Pineapple Rum and regular Bacardi white rum.

  1. Add canned or frozen pineapple chunks (frozen is better for the slushiness but use what you have) to a blender with rum (I mixed my 2 rums first based on the number of people drinking, then added that to the blender), simple syrup or just fine sugar, ice and lemon (or lime) juice.
  2. Blend until smooth. 
  3. Poor into glasses and garnish with chunks of pineapple and Luxardo Cherries.
  4. **Need to know how much to use? – there are handy calculators you can find by googling drink calculator – find the one that works best for you. I pour with a heavy hand, so it’s best if you find your own sweet spot.**
