Greek dinner tonight. Made some lemon garlic rice, lemon rub chicken and a Greek salad with pita bread and spicy feta hummus.

Need a little inspiration? Tonight I made a Greek inspired chicken dinner with lemon garlic rice, lemon rub chicken, a Greek salad with pita bread and spicy feta hummus.

You can use box rice pilaf, or basmati rice and cook per the directions. Add lemon, crushed or minced garlic cloves, some sliced cherry tomatoes and greek seasoning.

For the chicken, make a lemony marinade with olive oil, lemon and greek seasoning and brush over the chicken. Baking at a higher temperature for a shorter duration will keep your chicken moist – we’re talking 450 to 500 degrees for about 25-30 minutes depending on size and amount of chicken. Chicken is done when internal temperature (not touching a bone) reaches 165 degrees.

Greek salads are pretty simple and can have some variations. My husband doesn’t love olives, so this salad doesn’t have them, but calamata olives in a Greek salad gives it a nice salty touch. In this one, I used Romaine lettuce chopped, cherry tomatoes, sliced, cucumbers diced, red onion diced and crumbled feta cheese. Squeeze lemon juice on salad with a drizzle of olive oil and sprinkle with Greek seasoning.

Pita bread is store bought and heated up on our grill pan. The hummus was store bought spicy hummus and I added feta cheese and mixed together.

Enjoy this meal with a nice white wine such as Sauvignon or Chenin Blanc.
