We’ve been trying to include more vegetarian and vegan options in our diet and I felt like a warm, ramen style soup tonight. I didn’t follow a recipe per se, but I did use this recipe from Midwest Foodie Blog as a guide. I went with the ingredients I had on hand and used store-bought, cheapy top ramen noodles that were in my cupboard (minus the flavoring packet). I also used vegetable broth, but didn’t have coconut milk on hand, so that’s not in my soup, but I bet it would really be good. Mushrooms, peppers, tomatoes – whatever vegetables you have on hand, just throw em in there. some other ideas – corn, sweet peas, jalapeno peppers, green onions (scallions), mung beans. I always top with cilantro and a lime wedge.
