Fish Tacos – It’s What’s For Dinner

Need an easy weeknight, healthy’ish meal? Fish Tacos is the way.
Here are some options for fish depending on how easy and how healthy you want to go:

  1. Use Frozen fish sticks – good way to get kids started on fish
  2. Use Fresh or frozen un-battered white fish such as cod or tilapia

Either way, it will be fairly easy and not un-healthy. We like flour tortillas, but corn is good and a bit healthier for you. Make a salsa fresca by chopping up tomatoes, red or yellow onion and cilantro – mix together with lime juice and cumin spice. Grate your favorite cheese (we like cheddar and pepperjack), slice up some avocados, mix together some sour cream and your favorite hot sauce (for this, we like Tapatio or Cholula).

Cook the fish – if you’re using fish sticks, bake according to the directions (bake rather than fry to keep it a bit healthier especially since you’re going breaded). If you’re using fresh un-battered fish, heat some olive oil in a pan, salt and pepper the fish, place one side down in hot pan, cook for about 3 minutes on one side, turn over, cook for another 2-3 minutes. Alternatively, you can bake the fish – put in oven safe dish, salt and pepper fish, drizzle with olive oil, put in oven pre-heated to 350 and bake until fish is white and flaky.

Assemple the tacos – heat your tortillas on the stove (not too crispy, just nicely warmed), put a couple pieces of broken up fish on tortilla, top with cheese, sour cream/hot sauce, salsa fresca, and avocado slices. Wallah! You’re done. Now grab yourself a good Mexican lager and eat up.
